The Perfect Recipe for Healthy Butternut Muffins

If you are one of the many people who are careful about what you eat. Or you prefer to eat healthier food choices then this butternut muffins recipe is definitely something you should try out on your family. You will need half a butternut roasted in the oven until the inside feel soft to the touch and then remove the seeds and be sure to keep the puree or juices that come out of the butternut.

Whole Wheat Butternut Muffins


The Ingredients to make approximately twelve muffins:

*  1 tablespoon of either melted butter or a low fat oil

*  1 teaspoon of vanilla extract

*  2 eggs only the whites

*  ¾ of vanilla lite ( soy milk)

*  ¾ of a cup of butternut cut up into small cubes

*  2 tablespoons of butternut puree

*  ¼ of a teaspoon of finely ground ginger, alternatively you can use freshly grated ginger and then you will need a teaspoon

*  ½ teaspoon of ground nutmeg

*  1 teaspoon of cinnamon

*  1/8 of a teaspoon of salt

*  2 teaspoons of baking powder

*  1/3 of a cup of soft brown sugar

*  1 and ½ cups of whole-wheat flour

Method:

1.  Be sure to pre-heat your oven up to 400 degrees Fahrenheit before you start weighing your ingredients and begin your preparations.

2.  Combine all the dry ingredients into a large mixing bowl and use a whisk to combine the ingredients well.

3.  Mix the wet ingredients together in a separate bowl.

4.  Then add the wet ingredients into the dry mixture, and only mix until just combined.

5.  Spray your muffin tray with a light cooking spray.

6.  Fill the muffin cups up to 2/3 full.

7. Bake the mixture in the center of the oven for 20 minutes or until the muffins turn golden brown.

Turn the muffins out onto a cooling rack and serve with almond butter for a delicious treat. These butternut muffins are a great alternative to a healthy breakfast for you and your family.

Nutritional value per butternut muffin:

*  3.5 grams of protein

*  115 calories

*  2.5 grams of fiber

*  23 grams of carbohydrates

*  1 gram of fat

You can choose to freeze your butternut muffins. When reheating wrap them in aluminum foil and bake in the oven for around 10 minutes. These guilt free muffins are a great alternative to a snack or even a breakfast replacement. You can even add them into your children's lunch boxes for a healthy snack.
